Chayote (Sechium edule), also known as machucho, caiota (in the Azores) or pimpinela (in Madeira), is a fruit-vegetable with a mild flavor and great culinary versatility.

It grows abundantly on the island of Madeira, especially near watercourses such as streams and springs. Internationally, it is called chayote in Latin countries and christophene, mirliton, vegetable pear, or choko in English-speaking countries, and is an ingredient present in various culinary traditions.

Although it is often grown in home gardens and used as a vegetable, chayote is actually a fruit — like the tomato — as it contains seeds inside, resulting from the fertilization of the flower.
